Italiaans getinte aardappeltaartjes :
Ingrediënten :
4 Grote aardappelen
3 Eigelen
Peper/zout
Basilicumblaadjes
Oregano
25 gr. Boter
250 gr. Gehakt (Varken/rund)
1 Grote ui
2 Teentjes look
500 gr Zi'Anna's passata
1 Potje tomatenpuree
Zi'Anna's olijfolie
150 gr. Parmigiano Reggiano
200 gr. Mozzarella
Paneermeel
Bereiding :
Kook de aardappelen gaar in de schil.
Schil ze en duw ze door een passe vite, voeg de eierdooiers, geraspte Parmigiano en de boter toe, kruid met peper, zout, basilicum en nootmuskaat.
Maak balletjes van de puree en duw ze plat tot een mooie ronde schijf.
Leg op een boterpapier op een bakplaat.
Maak een gaatje in het midden van het taartje met een ei of een ronde vorm en laat afkoelen.
Bak het gehakt samen met ajuin, look aan in Zi'Anna's olijfolie.
Kruid met peper, zout, rozemarijn en sambal.
Voeg tomatenpuree toe en laat even meebakken.
Blus met scheutje wijn en de passata.
Laat pruttelen gedurende 20 minuten en voeg enkele blaadjes basilicum toe.
Schep de gemaakte saus in de aardappelputjes, overstrooi met Parmigiano en enkele stukjes mozzarella en gedroogde of verse oregano.
Overstrooi met paneermeel.
Schuif de bakplaat in een voorverwarmde oven op 200°C.
Laat bakken gedurende 15 minuten;
Buon apetito.
